roasted chickpeas

My children do not eat beans. No way, no how...they say. Beans are so very good for you sweet children of mine, I say to them. Still, not gonna happen. So I searched and searched for some kid-friendly bean recipes. To my delight I came across a roasted chickpea recipe. My kids love to snack on nuts. I thought perhaps roasting the chickpeas would make them crunchy, salty and lead my children to believe they are enjoying a fantastic snack of roasted nuts. Nothing to lose, eh!

You will need 1 15 oz can of chickpeas or garbanzo beans. 1 Tbsp. olive oil. Kosher salt or sea salt to taste. I used sea salt.

Preheat your oven to 450 degrees F.

Toss chickpeas with olive oil and sea salt.

Spread out in an even layer on a baking sheet.

Roast for 30 minutes.

Turn heat down to 375 degrees F.

Stir chickpeas and roast another 5-15 minutes, until chickpeas are golden brown. Be careful not to burn them. I had to roast mine 15 minutes to get them perfectly crunchy. Oven temps may vary so watch them carefully.

Taste and adjust seasoning. I added sea salt to mine.

There is a perfect point when the chickpeas become crunchy and golden, almost like nuts. Roast them too long, and they get too hard. Too short, and they taste too soft.

That is so cool! I have never heard of them roasted....but as a vegetarian I love chick peas...can't get the kids to eat them though:) I'll have to try this one.
